OBSERVATIONS AND CORRECTIVE ACTIONS
Item
Number
Violations cited in this report must be corrected within the time frames below.
*20 *Quart-size container of dill pickle chips in a cooler containing ice was measured at 58°F.
Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.
All product containers must be stored surrounded by ice, to the top of product level, in order to maintain proper cold-holding temperature.
Affected container of pickles was discarded during inspection.
 Corrected On-Site.  Repeat Violation.
37 Various size snap-top lidded containers containing pickles, olives, etc. were found stored in coolers of ice/ice water to maintain cold-holding temperature. Ice has turned to an ice water slurry due to ambient conditions, with excess water not being continuously drained from coolers. Many containers are completely submerged under the ice water. Containers are not factory sealed.
Packaged food may not be stored in direct contact with ice or water if the food is subject to the entry of water because of the nature of its packaging, wrapping or container or its positioning in the ice or water.  New Violation. To be Corrected By: 08/16/2024
52 Multiple buckets of used pickle brine were found uncovered in the sun, with insects/flies floating. Staff noted that liquid was to be discarded. Facility was instructed to cover liquid until disposal.  Corrected On-Site.  New Violation.

General Remarks
